David "Rowdy" Yeats e Andy Silvester formaram o Sounds of Blue em março de 1964 como uma banda de rhythm and blues de Stourbridge. Eles convidaram Stan Webb, que estava deixando a banda local The Shades 5, para se juntar a eles em agosto de 1964. A banda também incluiu Christine Perfect e Chris Wood (que mais tarde se juntaria ao Traffic), entre outros, em sua formação. Com uma nova formação, o Chicken Shack foi formado como um trio em abril de 1965, nomeando-se em homenagem ao álbum Back at the Chicken Shack de Jimmy Smith. Seu primeiro single "It's Okay With Me Baby / When My Left Eye Jumps" (BH 57-3135), foi lançado em 1968, pouco antes de seu primeiro lançamento em LP 40 Blue Fingers, Freshly Packed and Ready to Serve ser lançado no final daquele ano. O primeiro single e o LP de estreia atraíram muita atenção e 40 Blue Fingers… acabou tendo um sucesso considerável nas paradas (nº 12 na UK Albums Chart). Enquanto esperavam para terminar seu segundo LP, a banda lançou um segundo single, "Worried About My Woman" / "Six Nights In Seven" (BH 57-3143) no final de 1968. Ambas as canções foram compostas e cantadas por Stan Webb.
Seu segundo LP, OK Ken? foi lançado em fevereiro de 1969 e também obteve sucesso nas paradas. Embora tenha superado o primeiro álbum ao alcançar a 9ª posição, ao contrário do LP inicial, ele rapidamente saiu das paradas devido à falta de um single para apoiá-lo. A banda então decidiu lançar uma música do primeiro álbum (40 Blue Fingers...), "When The Train Comes Back" (BH 57-3146), após fazer overdub de uma seção de metais na faixa original. O verso "Hey Baby" foi uma tomada descartada do álbum OK Ken? Christine Perfect compôs e tocou piano e foi vocal principail em ambas as faixas, mas o single teve apenas um sucesso moderado.
O Chicken Shack se tornou um pilar do boom do blues branco no final dos anos 1960, e eles desfrutaram de algum bom sucesso comercial com seus dois primeiros álbuns alcançando o Top 20 na parada de álbuns do Reino Unido. Preocupados com que a popularidade da banda poderia desaparecer sem um single de sucesso nas rádios, eles decidiram gravar uma música que tinha sido um sucesso com Etta James nos EUA. O single " I'd Rather Go Blind " (c/w "Night Life") acabou se tornando um sucesso com Perfect nos vocais principais. O single foi bem sucedido o suficiente para garantir a Perfect o prêmio de 'Melhor Cantora Feminina' na Pesquisa do Leitor da Melody Maker em 1969.
O single "I'd Rather Go Blind" foi gravado após o lançamento dos dois primeiros LPs e Perfect já havia decidido deixar a banda e se aposentar da indústria musical antes que o single fizesse sucesso. Nessa época, ela já havia se casado discretamente com o baixista John McVie, da banda de blues Fleetwood Mac, e não queria fazer turnê com outra banda. Devido ao sucesso do single, a gravadora da banda, Blue Horizon, convenceu Perfect a lançar um álbum solo antes de considerar a aposentadoria. A gravação exata do single "I'd Rather Go Blind" pelo Chicken Shack foi incluída no álbum homônimo de Perfect, Christine Perfect, lançado pela Blue Horizon. Após a saída de Perfect da banda em 1969, ela foi rapidamente substituída por Paul Raymond do Plastic Penny. O Chicken Shack continuou gravando e se apresentando ao vivo, lançando mais alguns álbuns e tendo algum sucesso com o single "Tears in the Wind" (c/w "The Things You Put Me Through").
Depois de serem dispensados pelo Blue Horizon, o pianista Paul Raymond, o baixista Andy Silvester e o baterista Dave Bidwell saíram em 1971 para se juntar ao Savoy Brown. Nesse ponto, Webb reformou a banda como um trio com John Glascock no baixo e Paul Hancox na bateria, e eles gravaram Imagination Lady. A formação não durou; Glascock saiu para se juntar ao Carmen, enquanto Webb foi recrutado para o Savoy Brown em 1974 e gravou o álbum Boogie Brothers com eles.
Desde 1977, Webb reviveu o nome Chicken Shack em diversas ocasiões, com uma formação rotativa de músicos de blues britânicos, incluindo, em diferentes momentos, Paul Butler (ex-Jellybread, Keef Hartley Band) (guitarra), Keef Hartley, o ex- baterista do Ten Years After, Ric Lee, e Miller Anderson, alguns dos quais entraram e saíram diversas vezes.
