Hot Tuna é uma banda de rock, blues, blues acústico, blues rock, folk rock e hard rock norte-americana que teve seu começo durante um hiato na agenda de shows do Jefferson Airplane no início de 1969, enquanto Grace Slick estava se recuperando de uma cirurgia da garganta. Jorma Kaukonen, Jack Casady, Paul Kantner e o novo baterista Joey Covington realizaram vários shows em San Francisco, incluindo o clube original do Airplane, The Matrix, antes do Jefferson Airplane ter apoiado o álbum “Volunteers”. Embora Covington tinha sido contratado por Jefferson Airplane para o lugar de Spencer Dryden, Dryden continuou a se apresentar com a banda e Covington só foi chamado quando necessário.
O repertório inicial do Hot Tuna foi obtido a partir do material que o Jefferson Airplane descartava e de artistas country e blues norte-americanos, como Rev. Gary Davis, Jelly Roll Morton, Bo Carter e Arthur Blake (Blind Blake). Além desses shows, Jack & Jorma iriam tocar em dueto, com Jorma na guitarra acústica. A partir de outubro de 1969, Hot Tuna realizou a abertura para os shows do Jefferson Airplane, com uma combinação de ambos os conjuntos elétricos e acústicos. O nome da banda veio de alguém, que Kaukonen se refere como uma “inspiração espirituosa", que disse “Hot Tuna” depois de ouvir a frase “What's that smell like fish, oh baby/O que é que cheira como peixe, oh baby” da canção "Keep On Truckin”.
Em setembro de 1969, uma semana de concertos foram gravados em Nova Orleans House, em Berkeley, e lançado como um álbum ao vivo em 1970 chamado “Hot Tuna”. (Este álbum tornou-se carinhosamente conhecido pelos fãs como o “álbum de vidro quebrando”, por causa do som de quebrar copos de cerveja durante a gravação de “Uncle Sam Blues”.)
Em setembro de 1970, Hot Tuna realizou dois shows acústicos sem o Jefferson Airplane e recebeu boas críticas, o que significava que a banda poderia sobreviver sem o Airplane como banda de apoio. Assim, tornou-se independente, sendo composta por Jorma, Jack, o novo baterista Sammy Piazza e Papa John. Esta formação foi documentada pela primeira vez no álbum “First Pull Up, Then Pull Down” (1971).
Os álbuns de estúdio “Burgers” (1972) e “The Phosphorescent Rat” (1973) foram gravados a seguir. Estes dois álbuns colocam em destaque composições de material original de Kaukonen e incluiu algumas das obras mais delicadas e poéticas do guitarrista. David Crosby fez vocais de apoio em “Highway Song” e o tecladista Nick Buck fez sua primeira aparição como um convidado regular em estúdio e ao vivo com a banda durante os anos 1970.
Os álbuns “America's Choice” (1975), “Yellow Fever” (1975) e “Hoppkorv” (1976) revelam um novo poder com a chegada do baterista Bob Steeler. Depois de uma turnê no final de 1977, a banda resolveu fazer seu último show no Palladium, em Nova York, em 26 de novembro. Este concerto contou com “Buffalo” Bob Roberts no saxofone. Casady e Kaukonen tentaram seguir caminhos separados e perseguiram carreiras de curta duração nas bandas SVT e Vital Parts, respectivamente. Parecia que a Hot Tuna tinha terminado.
Mas a banda foi reformada novamente em 1986, com Joey Balin na guitarra até 1987. A eles se juntou Kantner em 1987 e, em 1988, algumas músicas antigas Jefferson Airplane foram tocadas pela banda. Esta formação continuou em 1989 e Kaukonen e Casady se juntaram ao Jefferson Airplane para o álbum de 1989, realizando acústicos conjuntos com a Hot Tuna no meio de cada show.
Ao longo da década de 1990, Hot Tuna novamente alternou estilos acústicos e elétricos. Os dois álbuns “Sweetwater” eram predominantemente acústicos. Hot Tuna sempre reuniu músicos de modo passageiro, mas os dois nomes que sempre estiveram na banda foram os de Jack Casady e Jorma Kaukonen. Em 2004, Casady e Kaukonen foram novamente unidos pelo guitarrista Barry Mitterhoff e o baterista Erik Diaz. Em abril de 2006, Hot Tuna apareceu na MerleFest, o maior festival de música popular da América. Em 2007, eles tocaram no Bonnaroo. Em agosto de 2009, após a saída de Diaz, Skoota Warner juntou-se oficialmente à banda como baterista.
Em novembro de 2010, Hot Tuna tornou-se um trio: Casady, Kaukonen e Mitterhoff. No mesmo mês, Kaukonen anunciou que Hot Tuna tinha começado a gravar o seu primeiro álbum de estúdio em 20 anos. O álbum “Steady as She Goes” foi lançado pela Red House Records em 5 de abril de 2011. No primeiro semestre de 2011, o guitarrista Jim Lauderdale e o gaitista Charlie Musselwhite realizaram turnê junto com a banda; no final do ano chegaram Musselwhite, os guitarristas David Bromberg, Larry Campbell, Steve Kimock e GE Smith, e a vocalista Teresa Williams.
